  1. Mexican Dip:
    • Ingredients: 
      • 12oz. Cream Cheese
      • 1lb ground beef 
      • 1pkg. taco seasoning 
      • 1 can refried beans 
      • 40z green chiles
      • 16oz salsa of choice 
      • ~ 1-2 cups Mexican Blend Cheese (or shredded cheese of choice)
    • Directions:
      • Preheat oven to 325 degrees. 
      • Brown ground beef & add taco seasoning.
      • When finished, add to the taco meat –
        • Refried beans and small can of green chiles 
      • Spread 12oz. of cream cheese in baking dish. 
      • Spread meat mixture on the cream cheese.
      • Spread salsa on top meat mixture.
      • Bake at 325 degrees 30-40 min and then cut oven off.
      • Top with Mexican blend cheese
      • Let cheese melt in cooling oven.
  2. Chicken Casserole: I have been loving the Rotisserie Chicken and Zucchini Recipe shared by Whitney Rife! 
  3. Chicken Parm
    • We served with a fresh salad, olive garden dressing, and french bread! 
  4. BBQ Chicken Flatbreads:
    • We love the pulled rotisserie chicken from Wal-Mart Deli + Naan Flat breads. Top with the pulled chicken, bbq sauce, mozzarella cheese + any other veggies to make a super quick and easy dinner! Serve with a salad or chips! 
  5. Broccoli Cheddar Soup: This recipe is from Alexa Anglin and let me tell you, it is absolutely delicious!!
